How to Sift and Blend Freshly Milled Flour for Better Baking

One of the biggest adjustments when you begin milling your own flour is realizing that freshly milled whole grain flour does not behave like the flour we have spent our lives buying in bags.

That sounds obvious until you try to make a soft sandwich loaf, tender biscuit, or delicate cake with the same wheat you have been using to make bread.

Then things can get frustrating.

The good news is that freshly milled flour is far more versatile than it sometimes gets credit for. We simply need to stop expecting one flour to do every job.

By choosing the right wheat, sifting when appropriate, and blending different wheats together, we can make flour suited to everything from a sturdy loaf of bread to biscuits, pastry, muffins, cookies, and tender cakes.

And you really don't need a pantry full of different grains to do it.


Freshly Milled Flour Gives Us More Control, Not Less

When we buy flour at the grocery store, most of the decisions have already been made for us.

Bread flour. All-purpose flour. Pastry flour. Cake flour.

We choose the bag based on what we're baking.

When we mill grain ourselves, we move those decisions back into our own kitchens.

That means we need to understand what we're controlling.

There are two big variables:

Sifting controls extraction.

Blending controls protein.

Once I understood those two things separately, working with freshly milled flour made much more sense.


What Sifting Freshly Milled Flour Actually Does

Whole grain flour straight from the mill contains the components of the wheat berry, including the bran and germ.

The coarse bran is wonderful stuff, but it changes how dough behaves.

Those bran particles absorb quite a bit of water, and their sharp edges can interfere with a developing gluten network. That is one reason a 100% whole grain loaf can be shorter, denser, and more rustic than a loaf made with refined flour.

Sifting allows us to remove some of that coarse bran.

And here's an important distinction:

Sifting freshly milled flour does not magically turn it into commercial white flour.

That's not what we're trying to do.

We're simply changing the extraction so we can change the way the flour behaves.

A coarse sift may remove only the largest bran particles and leave you with flour that still behaves very much like whole grain.

A finer sift removes considerably more.

Neither is inherently better.

The question is: What are you making?

That is the question I want us asking throughout this entire freshly milled grain series.


But You Cannot Sift Your Way to Tender Flour

This is where things get interesting.

Imagine we start with a high-protein hard wheat.

We can sift that flour beautifully. We can remove a substantial amount of bran. We can make it lighter and softer in appearance.

But underneath all of that, it is still high-protein wheat.

That matters.

If I want to build a beautiful loaf of bread, that strength is useful.

If I want a very tender cake, it can work against me.

So sifting is only one of our controls.

The other is choosing the right grain.


Hard Wheat vs. Soft Wheat

For everyday home baking, one of the most useful distinctions to understand is the difference between hard and soft wheat.

Hard wheat is generally higher in protein and gives us the structure we need for things like:

  • Yeast breads

  • Sourdough

  • Pizza

  • Sandwich loaves

  • Other doughs that need a strong gluten network

Soft wheat is lower in protein and is wonderful for applications where tenderness matters:

  • Biscuits

  • Cookies

  • Muffins

  • Quick breads

  • Pie crust

  • Scones

  • Many cakes

This is also why the words red and white don't tell us whether wheat is strong or tender.

Red and white primarily describe characteristics of the wheat that affect things such as flavor and color.

Hard and soft tell us about structure.

Those are two different conversations.

And confusing them can lead to a lot of disappointing baking.


You Probably Don't Need Six Buckets of Wheat

I love ingredients as much as the next person, but I don't believe in buying things simply because we're told we need them.

For a tremendous amount of everyday baking, hard white wheat and soft white wheat will get us remarkably far.

Hard white gives us the strength for bread.

Soft white gives us tenderness.

Then we can begin blending them.

Instead of buying a different grain for every possible application, we're learning how to create the flour we need.

That is much more useful to me.


Blending Freshly Milled Flour

This is where the whole system starts to click.

Once our grains are milled and sifted to the extraction we want, we can blend hard and soft wheat together by weight to change the approximate protein level and performance of the finished flour.

For a strong bread flour, we can lean heavily or entirely on hard wheat.

For everyday all-purpose baking, we can combine hard and soft wheat.

For pastry, we can shift the balance toward soft wheat.

And for tender cakes and quick breads, soft wheat becomes our primary flour.

We're no longer asking one wheat to somehow become everything.

We're choosing ingredients based on the job they need to do.


My Everyday Freshly Milled All-Purpose Blend

A wonderfully simple place to begin is a 50/50 blend of sifted hard white and sifted soft white wheat by weight.

For approximately one pound of flour, that means:

227 grams sifted hard white wheat flour

227 grams sifted soft white wheat flour

Whisk the two thoroughly until the mixture is uniform.

Now we have a very useful everyday flour for things like cookies, biscuits, and general baking.

And because we're working by weight, we can scale that blend up or down without changing the ratio.


Please Weigh Your Flour

If you're going to sift and blend freshly milled flour, this is one place where I strongly encourage you to use a kitchen scale.

Sifting changes the density of flour.

A cup of fluffy, finely sifted flour does not necessarily contain the same amount of flour as a cup of freshly milled whole grain flour.

Volume measurements make it unnecessarily difficult to repeat our results.

Grams make this simple.

If I know exactly how much flour went into my sieve and exactly how much came out, I can calculate my extraction.

If I know exactly how much hard and soft wheat went into my blend, I can reproduce it next time.

That repeatability is what turns experimentation into a useful kitchen system.


Do You Need an Electric Sifter?

No.

I use tools when they genuinely make a job easier, but I don't believe everyone needs to buy another machine before they can begin.

An electric sifter is certainly convenient if you process flour frequently or in larger quantities.

But hand sieves work.

The flour does not know whether electricity was involved.

If you're just beginning, use what you have or start simply. If sifting becomes a regular part of your baking routine, then you can decide whether a machine earns its space in your kitchen.


Don't Throw Away the Bran

After sifting, we're left with bran.

That isn't garbage.

Depending on what I'm making, there are several useful ways to put it back to work.

It can be added to oatmeal, granola, muffins, pancakes, crackers, or porridge.

For rustic bread, it can also be soaked before being incorporated back into the dough. Hydrating the bran softens those coarse particles before they encounter the developing gluten network.

And, of course, around here there is always another option.

The chickens are perfectly happy to help.

Whatever you decide to do with it, remember that the bran contains natural oils too. If you're keeping it, store it appropriately rather than leaving it forgotten in a warm pantry.


A Note About Homemade Cake Flour

There is one distinction I think is important enough to make very clear.

We cannot truly reproduce commercial cake flour at home simply by sifting soft wheat.

Commercial cake flour undergoes processing that changes the way it behaves in certain cake formulas, particularly very high-sugar cakes.

What we can make is a lovely low-protein cake blend using soft wheat.

That flour can be beautiful in butter cakes, pound cakes, muffins, and quick breads.

I just don't want to call something homemade cake flour and then have you wonder what went wrong when you use it in a formula that depends on the special properties of commercial cake flour.

Knowing the limitation makes the homemade version more useful, not less.


This Is the Part of Fresh Milling I Love

Milling grain at home isn't just about replacing a bag of flour with a bucket of wheat berries.

We're learning the ingredient from the beginning.

We can decide which grain we want.

We can decide how much bran we want to retain.

We can blend wheats to change the structure.

We can adjust our flour for the food we're actually trying to make.

And suddenly freshly milled flour stops being one ingredient.

It becomes a whole pantry of possibilities.

You don't have to memorize everything at once.

Start with this:

Choose the grain for the job.

Sift to the softness you want.

Blend for the structure you need.

And weigh everything.

Once those pieces make sense, you have far more control over your freshly milled baking than you may have realized.

And that means we can make wonderful whole grain bread when we want whole grain bread, while still making soft biscuits, tender pastry, beautiful cookies, and lovely cakes when that's what belongs on the table.

That's exactly the kind of flexibility I want from an ingredient that earns a permanent place in my kitchen.
